Dear T L,
I think you are basically right in your understanding of the meridians and the organs.
For sure, Yin and Yang should be kept in balance all the time, but as you have read the text, this balance is only relative, not absolute.
Also, the meridians, in comparison with the internal organs, are basically much more exterior.

Am I understanding this properly? For example, the lung and large intestine are internally and externally connected with there respective regular meridians of Taiyin and yangming, with the yin meridian being internal and the yang meridian being external. With the rest of the meridians following the same internal/external balance between the shaoyin and taiyang. and the jueyin and shaoyang. Always that yin and yang balance
